{"id":2423,"date":"2018-07-13T17:51:52","date_gmt":"2018-07-13T17:51:52","guid":{"rendered":"https:\/\/www.staging.healthcoachinstitute.com\/?p=2423"},"modified":"2022-03-03T21:40:50","modified_gmt":"2022-03-03T21:40:50","slug":"bhc-grad-abbys-baked-banana-berry-peanut-butter-oats","status":"publish","type":"post","link":"https:\/\/www.healthcoachinstitute.com\/articles\/bhc-grad-abbys-baked-banana-berry-peanut-butter-oats\/","title":{"rendered":"BHC Grad Abby&#039;s Baked Banana &amp; Berry &amp; Peanut Butter Oats"},"content":{"rendered":"<p>Even though this banana, berry and peanut butter oats bake sounds like a mouthful, it is really quick and simple to make\u2014it only takes 10 minutes to prep and then you have FOUR breakfasts all ready and waiting!<\/p>\n<p>For those of you who don\u2019t have time to sit down to eat in the mornings, this is the ideal breakfast as it can just be popped into a tupperware and eaten at your desk or even in the car!<\/p>\n<p>The good news is that this is really filling because of the slow-release oats, plenty of fruit, and protein from the eggs so it should easily keep you full until lunchtime and ward off those hunger pangs\u2026.or it could even make a great dessert.<\/p>\n<div class=\"vc_custom_heading\">\n<h5><strong><img decoding=\"async\" class=\"alignnone size-full wp-image-2432\" src=\"https:\/\/cdn5.healthcoachinstitute.com\/wp-content\/uploads\/2018\/04\/baked-oats-2-e1494345790981-1.jpg\" alt=\"\" width=\"640\" height=\"480\" srcset=\"https:\/\/www.healthcoachinstitute.com\/articles\/wp-content\/uploads\/2018\/04\/baked-oats-2-e1494345790981-1.jpg 640w, https:\/\/www.healthcoachinstitute.com\/articles\/wp-content\/uploads\/2018\/04\/baked-oats-2-e1494345790981-1-300x225.jpg 300w\" sizes=\"(max-width: 640px) 100vw, 640px\" \/><\/strong><\/h5>\n<p><strong>Prep time: 10 minutes.\u00a0 <\/strong><\/p>\n<p><strong>Ingredients: <\/strong><\/p>\n<p>(serves 4 -5)<\/p>\n<\/div>\n<div class=\"wpb_text_column wpb_content_element \">\n<div class=\"wpb_wrapper\">Coconut oil for greasing<br \/>\n180g oats<br \/>\n1 1\/2 tsp baking powder<br \/>\n1 tsp ground cinnamon<br \/>\n1 tsp vanilla extract<br \/>\n2 tbsp peanut butter (any nut butter will work equally well)<br \/>\n2 tsp honey (I have started making this without any honey at all and it still tastes as good)<br \/>\n2 eggs, beaten<br \/>\n220ml almond milk<br \/>\n2 bananas \u2013 1 mashed and the other sliced for the top<br \/>\n150g fresh berries (unless you can only get frozen) plus extra for decoration<br \/>\nflaked almonds to garnish<br \/>\n______________________<\/div>\n<\/div>\n<div class=\"vc_custom_heading\"><strong>Cooking time: 50 minutes.<\/strong><\/p>\n<p><strong>Method:<\/strong><\/p>\n<\/div>\n<div class=\"wpb_text_column wpb_content_element \">\n<div class=\"wpb_wrapper\">Preheat oven to 200 degrees Celsius or between 375 and 400 degrees Fahrenheit.<br \/>\nGrease a large casserole dish with coconut oil.<br \/>\nCombine the oats with the cinnamon and the baking powder in a large mixing bowl.<br \/>\nThen add the rest of the ingredients \u2013 vanilla extract, peanut butter, honey, eggs, milk, mashed banana and frozen berries.<br \/>\nCombine thoroughly and transfer into the casserole dish.<br \/>\nDecorate the top with sliced banana and the additional berries plus a sprinkling of flaked almonds.<br \/>\nBake in the oven for 50 minutes until the top is golden brown and a skewer comes out dry.<br \/>\nRemove from oven and leave to cool for 10 minutes before cutting.<br \/>\n______________________<\/p>\n<p><strong>About Abby:<\/strong><\/p>\n<\/div>\n<\/div>\n<div class=\"vc_custom_heading vc_custom_1501247927594\">\n<h2><img decoding=\"async\" class=\"alignnone size-full wp-image-2431\" src=\"https:\/\/cdn5.healthcoachinstitute.com\/wp-content\/uploads\/2018\/04\/DSC02725-795x530-1.jpg\" alt=\"\" width=\"795\" height=\"530\" \/><\/h2>\n<p><strong>Abigail Booth<\/strong> (BSc Hons) is a BHC grad, certified Health and Wellness Coach and creator of Vitality <span id=\"urn:text-annotation-0a98c301-69f7-4622-a210-940c6e207b7c\" class=\"textannotation disambiguated wl-other wl-link\" itemid=\"http:\/\/what-is.healthcoachinstitute.com\/hci\/enhancedcategory\/health_coach\">Health Coaching<\/span> based in the U.K.<\/p>\n<p>Abby says:<br \/>\n<em>Early on in my life I knew that I wanted to help people so I studied for a\u00a0degree\u00a0in Psychology\u00a0but after completing it I ended up using my skills in a different arena.\u00a0<\/em><em>I then spent\u00a018 years working in people Management\u00a0in a corporate environment in which the\u00a0most rewarding part was coaching\u00a0the people I worked with to become the best versions of themselves.<br \/>\n<\/em><br \/>\n<em>At numerous points throughout my career I have dabbled in the idea of working in health and nutrition but making big changes like that are scary. don\u2019t have time to sit down to eat in the mornings, this is the ideal breakfast as it can just be popped into a tupperware and eaten at your desk or even in the car!\n\nThe good news is that this is really filling because of the slow-release oats, plenty of fruit, and protein from the eggs so it should easily keep you full until lunchtime and ward off those hunger pangs\u2026.or it could even make a great dessert.\n<div class=\"vc_custom_heading\">\n<h5><strong><img class=\"alignnone size-full wp-image-2432\" src=\"https:\/\/cdn5.healthcoachinstitute.com\/wp-content\/uploads\/2018\/04\/baked-oats-2-e1494345790981-1.jpg\" alt=\"\" width=\"640\" height=\"480\" \/><\/strong><\/h5>\n<strong>Prep time: 10 minutes.\u00a0 <\/strong>\n\n<strong>Ingredients: <\/strong>\n\n(serves 4 -5)\n\n<\/div>\n<div class=\"wpb_text_column wpb_content_element \">\n<div class=\"wpb_wrapper\">Coconut oil for greasing\n180g oats\n1 1\/2 tsp baking powder\n1 tsp ground cinnamon\n1 tsp vanilla extract\n2 tbsp peanut butter (any nut butter will work equally well)\n2 tsp honey (I have started making this without any honey at all and it still tastes as good)\n2 eggs, beaten\n220ml almond milk\n2 bananas \u2013 1 mashed and the other sliced for the top\n150g fresh berries (unless you can only get frozen) plus extra for decoration\nflaked almonds to garnish\n______________________<\/div>\n<\/div>\n<div class=\"vc_custom_heading\"><strong>Cooking time: 50 minutes.<\/strong>\n\n<strong>Method:<\/strong>\n\n<\/div>\n<div class=\"wpb_text_column wpb_content_element \">\n<div class=\"wpb_wrapper\">Preheat oven to 200 degrees Celsius or between 375 and 400 degrees Fahrenheit.\nGrease a large casserole dish with coconut oil.\nCombine the oats with the cinnamon and the baking powder in a large mixing bowl.\nThen add the rest of the ingredients \u2013 vanilla extract, peanut butter, honey, eggs, milk, mashed banana and frozen berries.\nCombine thoroughly and transfer into the casserole dish.\nDecorate the top with sliced banana and the additional berries plus a sprinkling of flaked almonds.\nBake in the oven for 50 minutes until the top is golden brown and a skewer comes out dry.\nRemove from oven and leave to cool for 10 minutes before
