It\u2019s so good that everyone will love it and want to eat more of it throughout the rest of the fall and winter!<\/p>\n<p>Prep time: 25 minutes<br \/>\nCook time: 30 minutes<br \/>\nServings: 4<\/p>\n<hr \/>\n<h2><strong>WARM BELLY SQUASH STEW-SOUP RECIPE<\/strong><\/h2>\n<p><strong>INGREDIENTS:<\/strong><br \/>\n2 leeks (pick ones that have thick white stems)<br \/>\n1 garlic clove<br \/>\n2 serrano chilis<br \/>\n2\u00a0Tbsp fresh ginger (finely chopped)<br \/>\n1 Tbsp curry powder<br \/>\n3 Tbsp tamari (wheat-free soy sauce)<br \/>\n1 tsp brown sugar<br \/>\n1 can unsweetened coconut milk<br \/>\n2.5 lbs pumpkin or butternut squash or kabocha<br \/>\n1 lime<br \/>\n1 cups cashews (optional)<br \/>\n1 Tbsp coconut oil<\/p>\n<hr \/>\n<p><strong>INSTRUCTIONS:<\/strong><\/p>\n<ul>\n<li>Halve the leeks lengthwise and cut into 1\/4 inch pieces. Wash well in a bowl of water, then drain.<\/li>\n<li>Heat the oil in a wide soup pot.<\/li>\n<li>Add the leeks and cook over fairly high heat, stirring frequently, until partially softened (about 4 minutes).<\/li>\n<li>Add the garlic, ginger and chilis and cook for another two minutes.<\/li>\n<li>Then add the curry, brown sugar, and tamari sauce.<\/li>\n<li>Reduce the heat to medium, stir in ingredients and cook for a few minutes more.<\/li>\n<li>Add 1.5 cups water, coconut milk, squash, and 1 tsp salt.<\/li>\n<li>Bring to a boil, then lower heat and simmer covered for 25 min.<\/li>\n<li>Meanwhile, heat oven to 325\u00b0F. Spread cashews on a sheet pan. It\u2019s so good that everyone will love it and want to eat more of it throughout the rest of the fall and winter!\n\nPrep time: 25 minutes\nCook time: 30 minutes\nServings: 4\n\n<hr \/>\n\n<h2><strong>WARM BELLY SQUASH STEW-SOUP RECIPE<\/strong><\/h2>\n<strong>INGREDIENTS:<\/strong>\n2 leeks (pick ones that have thick white stems)\n1 garlic clove\n2 serrano chilis\n2\u00a0Tbsp fresh ginger (finely chopped)\n1 Tbsp curry powder\n3 Tbsp tamari (wheat-free soy sauce)\n1 tsp brown sugar\n1 can unsweetened coconut milk\n2.5 lbs pumpkin or butternut squash or kabocha\n1 lime\n1 cups cashews (optional)\n1 Tbsp coconut oil\n\n<hr \/>\n\n<strong>INSTRUCTIONS:<\/strong>\n<ul>\n \t<li>Halve the leeks lengthwise and cut into 1\/4 inch pieces. Wash well in a bowl of water, then drain.<\/li>\n \t<li>Heat the oil in a wide soup pot.<\/li>\n \t<li>Add the leeks and cook over fairly high heat, stirring frequently, until partially softened (about 4 minutes).<\/li>\n \t<li>Add the garlic, ginger and chilis and cook for another two minutes.<\/li>\n \t<li>Then add the curry, brown sugar, and tamari sauce.<\/li>\n \t<li>Reduce the heat to medium, stir in ingredients and cook for a few minutes more.<\/li>\n \t<li>Add 1.5 cups water, coconut milk, squash, and 1 tsp salt.<\/li>\n \t<li>Bring to a boil, then lower heat and simmer covered for 25 min.<\/li>\n \t<li>Meanwhile, heat oven to 325\u00b0F. Spread cashews on a sheet pan.
