Seriously!? It doesn\u2019t get any better\u2026<\/p>\n<p>Let\u2019s get really honest for a minute. You know those \u201cmuffins\u201d that you buy at convenience stores with your coffee? Yeah, those. They come wrapped in crinkly plastic that\u2019s near impossible to rip open with your teeth. And they sit all pert in their flimsy little cupcake cups that stick to the \u201cmuffin\u201d like wet toilet paper and it practically rips off a chunk when you try to peel it? Yeah, those. I hate to tell ya, but it ain\u2019t no muffin; it\u2019s a cake disguised as a muffin. Basically, it\u2019s a disgrace to the muffin.<\/p>\n<p>Then you get those bigger bran muffins that look like giant brown mushrooms and are found in more reputable bakeries. These are a lot closer to the real-deal muffin but still, they can be either too dry or too sweet and frankly, who knows what goes into making them? Most likely sugar. And lots of it.<\/p>\n<p>Ever tried completely sugarless muffins? By sugarless we mean free of not only table sugar but sugar substitutes like honey, maple syrup or agave. It\u2019s like eating a piece of a box. Or a paper towel. Honestly, it\u2019s pretty inedible. That doesn\u2019t mean though, that you need to whip out your soup ladle next time you bake muffins and scoop ladle-fulls of sugar into your baking mix. It does mean you can mix and match using sugar substitutes.<\/p>\n<p>Call it the eclectic muffin. Or the vintage-meets-jeans muffin. Or the fruit-meets-honey muffin. The latter is what we\u2019ve tried and tasted in this <span id=\"urn:text-annotation-f0e18ebf-96ed-40eb-83e5-4bff85fa4434\" class=\"textannotation disambiguated wl-other wl-link\" itemid=\"http:\/\/what-is.healthcoachinstitute.com\/hci\/enhancedcategory\/recipes\">recipe<\/span> below. It\u2019s our knockout healthy, fruity, corny muffins that won\u2019t give you that muffin top! Why? Check out the ingredients in our <span id=\"urn:text-annotation-2fdc0ed9-6aae-42db-aed8-0e6e91628e2f\" class=\"textannotation disambiguated wl-other wl-link\" itemid=\"http:\/\/what-is.healthcoachinstitute.com\/hci\/enhancedcategory\/recipes\">recipe<\/span> below! Your main sweet source is not sugar but fruit. And not just any fruit\u2026 strawberries. Fresh, ripe, red-pink, juicy strawberries, which are super high in antioxidants, which help fight free radical compounds that can lead to chronic diseases.<\/p>\n<p>Plus they can whiten your teeth at the same time. The Malic acid in strawberries contains tooth-whitening properties. Yes, for real. You can even mush up one of your strawberries, add baking soda and a touch of water to make a paste and brush your teeth with it. Where do you think strawberry toothpaste originated?<\/p>\n<p>The main grain for these muffins is polenta\u2014a fancy name for yellow cornmeal\u2014once considered peasant food in 18th century Italy. It\u2019s cheap. It\u2019s nutritious. It\u2019s creamy. And it\u2019s delicious. And not to mention crunchy\u2026and corny. Especially if you buy it stone-ground in bulk and tell it jokes.<\/p>\n<p>It has protein, fiber and zero cholesterol. It\u2019s high in vitamin A and C and has lots of beta-carotene, which helps prevent cancer and heart disease. So you see, polenta is not just corn (as long as you buy the organic kind to ensure it\u2019s not genetically modified).<\/p>\n<p>So yes, this <span id=\"urn:text-annotation-c18911b6-baa1-4715-9fcc-66587ed7c579\" class=\"textannotation disambiguated wl-other wl-link\" itemid=\"http:\/\/what-is.healthcoachinstitute.com\/hci\/enhancedcategory\/recipes\">recipe<\/span> is sugarless. But to add some sweetness we\u2019ve included honey (you don\u2019t need too much because the strawberries melt and sweeten) so even a \u00bc cup of honey goes a long way. You can substitute with maple syrup or agave if you prefer. But for the latter, you\u2019ll need way less, probably 2 tablespoons will do.<\/p>\n<p>The absolute best thing about these muffins is that they are the real-deal. These are muffins. They\u2019re hearty and earthy and dense and crumbly and nutty and crunchy and packed with sweet, pink, juicy, jammy strawberries that melt in your mouth\u2026 and don\u2019t forget, they\u2019re always corny. Eat one and you\u2019ll be joking your way around the office. Or if you work from home, you\u2019ll be laughing aloud at your own jokes, inside your head.<\/p>\n<p>They\u2019re that corny!<\/p>\n<h2>Fruity Corny Polenta Strawberry Muffins<\/h2>\n<p>Makes a dozen (prep time 10 minutes; baking time 20-25 minutes):<\/p>\n<p>What you need to make these berry-licious muffins:<\/p>\n<ul>\n<li>1 cup polenta or yellow cornmeal (organic so it\u2019s non-GMO)<\/li>\n<li>1 cup almond meal or coconut flour<\/li>\n<li>2 teaspoon baking powder<\/li>\n<li>1 teaspoon salt<\/li>\n<li>4 eggs<\/li>\n<li>1\/2 cup almond milk or cow\u2019s milk<\/li>\n<li>2 teaspoon vanilla extract<\/li>\n<li>\u00bd cup honey (or \u00bc cup of honey is fine too) or substitute sweetener<\/li>\n<li>4 tablespoons melted coconut oil<\/li>\n<li>2 cups diced strawberries (preferably organic)<\/li>\n<\/ul>\n<p>How to make them muffins:<\/p>\n<p>\u2013 Preheat oven to 350 degrees and grease muffin tray with coconut oil.<br \/>\u2013 Mix polenta, almond meal, baking powder and salt in mixing bowl.<br \/>\u2013 Whisk liquid ingredients in another mixing bowl.<br \/>\u2013 Combine wet and dry ingredients.<br \/>\u2013 Toss in strawberries.<br \/>\u2013 Spoon mixture into muffin tray.<br \/>\u2013 Bake for 20-25 minutes until slightly golden.<br \/>\u2013 Remove from oven and cool for 10 minutes.<br \/>\u2013 Eat plain and warm or cut open and spread on grass-fed butter\u2014yum!<br \/><em>Leave a comment below! top? Seriously!? It doesn\u2019t get any better\u2026<\/p>\n<p>Let\u2019s get really honest for a minute. You know those \u201cmuffins\u201d that you buy at convenience stores with your coffee? Yeah, those. They come wrapped in crinkly plastic that\u2019s near impossible to rip open with your teeth. And they sit all pert in their flimsy little cupcake cups that stick to the \u201cmuffin\u201d like wet toilet paper and it practically rips off a chunk when you try to peel it? Yeah, those. I hate to tell ya, but it ain\u2019t no muffin; it\u2019s a cake disguised as a muffin. Basically, it\u2019s a disgrace to the muffin.<\/p>\n<p>Then you get those bigger bran muffins that look like giant brown mushrooms and are found in more reputable bakeries. These are a lot closer to the real-deal muffin but still, they can be either too dry or too sweet and frankly, who knows what goes into making them? Most likely sugar. And lots of it.<\/p>\n<p>Ever tried completely sugarless muffins? By sugarless we mean free of not only table sugar but sugar substitutes like honey, maple syrup or agave. It\u2019s like eating a piece of a box. Or a paper towel. Honestly, it\u2019s pretty inedible. That doesn\u2019t mean though, that you need to whip out your soup ladle next time you bake muffins and scoop ladle-fulls of sugar into your baking mix. It does mean you can mix and match using sugar substitutes.<\/p>\n<p>Call it the eclectic muffin. Or the vintage-meets-jeans muffin. Or the fruit-meets-honey muffin. The latter is what we\u2019ve tried and tasted in this <span id=\"urn:text-annotation-f0e18ebf-96ed-40eb-83e5-4bff85fa4434\" class=\"textannotation disambiguated wl-other wl-link\" itemid=\"http:\/\/what-is.healthcoachinstitute.com\/hci\/enhancedcategory\/recipes\">recipe<\/span> below. It\u2019s our knockout healthy, fruity, corny muffins that won\u2019t give you that muffin top! Why? Check out the ingredients in our <span id=\"urn:text-annotation-2fdc0ed9-6aae-42db-aed8-0e6e91628e2f\" class=\"textannotation disambiguated wl-other wl-link\" itemid=\"http:\/\/what-is.healthcoachinstitute.com\/hci\/enhancedcategory\/recipes\">recipe<\/span> below! Your main sweet source is not sugar but fruit. And not just any fruit\u2026 strawberries. Fresh, ripe, red-pink, juicy strawberries, which are super high in antioxidants, which help fight free radical compounds that can lead to chronic diseases.<\/p>\n<p>Plus they can whiten your teeth at the same time. The Malic acid in strawberries contains tooth-whitening properties. Yes, for real. You can even mush up one of your strawberries, add baking soda and a touch of water to make a paste and brush your teeth with it. Where do you think strawberry toothpaste originated?<\/p>\n<p>The main grain for these muffins is polenta\u2014a fancy name for yellow cornmeal\u2014once considered peasant food in 18th century Italy. It\u2019s cheap. It\u2019s nutritious. It\u2019s creamy. And it\u2019s delicious. And not to mention crunchy\u2026and corny. Especially if you buy it stone-ground in bulk and tell it jokes.<\/p>\n<p>It has protein, fiber and zero cholesterol. It\u2019s high in vitamin A and C and has lots of beta-carotene, which helps prevent cancer and heart disease. So you see, polenta is not just corn (as long as you buy the organic kind to ensure it\u2019s not genetically modified).<\/p>\n<p>So yes, this <span id=\"urn:text-annotation-c18911b6-baa1-4715-9fcc-66587ed7c579\" class=\"textannotation disambiguated wl-other wl-link\" itemid=\"http:\/\/what-is.healthcoachinstitute.com\/hci\/enhancedcategory\/recipes\">recipe<\/span> is sugarless. But to add some sweetness we\u2019ve included honey (you don\u2019t need too much because the strawberries melt and sweeten) so even a \u00bc cup of honey goes a long way. You can substitute with maple syrup or agave if you prefer. But for the latter, you\u2019ll need way less, probably 2 tablespoons will do.<\/p>\n<p>The absolute best thing about these muffins is that they are the real-deal. These are muffins. They\u2019re hearty and earthy and dense and crumbly and nutty and crunchy and packed with sweet, pink, juicy, jammy strawberries that melt in your mouth\u2026 and don\u2019t forget, they\u2019re always corny. Eat one and you\u2019ll be joking your way around the office. Or if you work from home, you\u2019ll be laughing aloud at your own jokes, inside your head.<\/p>\n<p>They\u2019re that corny!<\/p>\n<h2>Fruity Corny Polenta Strawberry Muffins<\/h2>\n<p>Makes a dozen (prep time 10 minutes; baking time 20-25 minutes):<\/p>\n<p>What you need to make these berry-licious muffins:<\/p>\n<ul>\n<li>1 cup polenta or yellow cornmeal (organic so it\u2019s non-GMO)<\/li>\n<li>1 cup almond meal or coconut flour<\/li>\n<li>2 teaspoon baking powder<\/li>\n<li>1 teaspoon salt<\/li>\n<li>4 eggs<\/li>\n<li>1\/2 cup almond milk or cow\u2019s milk<\/li>\n<li>2 teaspoon vanilla extract<\/li>\n<li>\u00bd cup honey (or \u00bc cup of honey is fine too) or substitute sweetener<\/li>\n<li>4 tablespoons melted coconut oil<\/li>\n<li>2 cups diced strawberries (preferably organic)<\/li>\n<\/ul>\n<p>How to make them muffins:<\/p>\n<p>\u2013 Preheat oven to 350 degrees and grease muffin tray with coconut oil.<br \/>\u2013 Mix polenta, almond meal, baking powder and salt in mixing bowl.<br \/>\u2013 Whisk liquid ingredients in another mixing bowl.<br \/>\u2013 Combine wet and dry ingredients.<br \/>\u2013 Toss in strawberries.<br \/>\u2013 Spoon mixture into muffin tray.<br \/>\u2013 Bake for 20-25 minutes until slightly golden.<br \/>\u2013 Remove from oven and cool for 10 minutes.<br \/>\u2013 Eat plain and warm or cut open and spread on grass-fed butter\u2014yum!<br \/><em>Leave a comment below!
