{"id":9004111223101643,"date":"2017-08-23T15:56:57","date_gmt":"2017-08-23T15:56:57","guid":{"rendered":"https:\/\/staging.healthcoachinstitute.com\/?p=1373"},"modified":"2022-03-03T21:56:33","modified_gmt":"2022-03-03T21:56:33","slug":"hci-grads-thai-mung-bean-curry-recipe","status":"publish","type":"post","link":"https:\/\/www.healthcoachinstitute.com\/articles\/hci-grads-thai-mung-bean-curry-recipe\/","title":{"rendered":"BHC Grad\u2019s Thai Mung Bean &amp; Button Shroom Vegan Curry Detox Recipe"},"content":{"rendered":"<p class=\"p1\">Zhana is a BHC grad and certified Holistic Health Coach based in the U.K. Here she shares one of her self-declared masterpieces\u2014AND get this&#8230;it\u2019s a vegan, gluten-free, detox recipe!<\/p>\n<h2 class=\"p1\" style=\"text-align: center;\"><b>Thai Style Mung Bean &amp;\u00a0Button Mushroom Curry\u00a0<\/b><\/h2>\n<p class=\"p1\" style=\"text-align: center;\"><b>with Coconut Infused Brown Rice<\/b><\/p>\n<p><strong>For the rice:<\/strong><\/p>\n<ul>\n<li>3\/4 cup of brown rice sprinkled with black pepper<\/li>\n<li>1\/2 can coconut milk<\/li>\n<li>1 cup of water<\/li>\n<\/ul>\n<p>Place all ingredients in an oven tray and cook on\u00a0180C\/350F until the water is absorbed.<br \/>\n<strong>For the mung beans:<\/strong><\/p>\n<ul>\n<li>3\/4 cup mung beans<\/li>\n<li>1 red onion<\/li>\n<li>1 Tbsp coconut oil<\/li>\n<li>3 cloves garlic, chopped<\/li>\n<li>1 carrot<\/li>\n<li>1 Tbsp curry powder<\/li>\n<li>1 can coconut milk<\/li>\n<li>2 cups button mushrooms<\/li>\n<li>1 stalk lemongrass<\/li>\n<\/ul>\n<p>Cook the mung beans on a medium heat with about 1.5 -2 cups water.<br \/>\nSaut\u00e9 1 chopped red onion for 1-2 mins in 1 tbsp coconut oil.<br \/>\nAdd 3 garlic cloves chopped, 1 chopped carrot and cook for another 2-3 mins.<br \/>\nAdd 1 tbsp curry powder and stir in for one more minute.<\/p>\n<p>Open a can of coconut milk, spoon up the cream and add in the pan. Cook for another 2-3 minutes until the milk reduces, then pour in the remaining coconut water from the can.<\/p>\n<p>Add the button mushrooms, 1 whole stalk lemongrass (which has to be removed at the end of cooking as it has been used just for extra flavor) and cook until it gets a nice and creamy consistency. In the end, mix up it altogether with the mung bean.<\/p>\n<p>Serve with the the rice, sprinkle with fresh basil and fresh red chili and enjoy!<br \/>\n<strong>About Zhana:\u00a0<\/strong><\/p>\n<p><em>I might be a <span id=\"urn:text-annotation-2e6f151c-b170-4660-a389-1620f697ed5a\" class=\"textannotation disambiguated wl-other wl-link\" itemid=\"http:\/\/what-is.healthcoachinstitute.com\/hci\/enhancedcategory\/health_coach\">health coach<\/span> now but that wasn\u2019t always the case!\u00a0In fact, if someone had told me 4 years ago that I would be so passionate about\u00a0HOLISTIC HEALTH\u00a0and I would no longer be interested in sweets &amp; treats, I would have laughed at their face!<br \/>\n<\/em><br \/>\n<em>I mean, I was that person pursuing a career, working long hours and eating at 1am after starving\u00a0myself through the whole day. I was constantly comforting myself with junk food and I was obsessed\u00a0with chocolate\u2014literally a sugar addict!!! It\u2019s not only that I got overweight but I was always exhausted, annoyed and miserable. And as I was in a state of not loving myself, I wasn\u2019t enjoying\u00a0anything around me either. Cook for another 2-3 minutes until the milk reduces, then pour in the remaining coconut water from the can.\n\nAdd the button mushrooms, 1 whole stalk lemongrass (which has to be removed at the end of cooking as it has been used just for extra flavor) and cook until it gets a nice and creamy consistency. It\u2019s not only that I got overweight but I was always exhausted, annoyed and miserable. And as I was in a state of not loving myself, I wasn\u2019t enjoying\u00a0anything around me either.
