Tomatoes come in all shapes and sizes and are packed with Vitamin C, A and K, biotin, molybdenum. Plus, copper, manganese, folate, vitamin B6 and potassium! Not too shabby eh? So let\u2019s make the MOST of them while they\u2019re still in season.<\/p>\n<p>We love our tomatoes fresh so throwing them in a salad seems like the best way to go especially since we want to be eating as much fresh salad as possible always (but especially while all these goodies are in season). When we think salad, we think color, we think flavor, we think variety. So what better than a\u00a0<strong>salad\u00a0Ni\u00e7oise<\/strong>\u00a0or\u00a0<i><b>la salada nissarda<\/b><\/i>\u00a0that originated in the French city of Nice to whet our appetites?<\/p>\n<p>And the best thing about this salad is you can eat it for brunch, lunch or dinner! It\u2019s that filling!<\/p>\n<p><strong>How to make a really NICE Ni\u00e7oise salad?\u00a0<\/strong><br \/>\nHere\u2019s what you\u2019ll need:<\/p>\n<ul>\n<li><strong>Lettuce\u00a0<\/strong>(any kind as long as it\u2019s fresh preferably straight from a farmer\u2019s market or organic \u2014romaine, butter or even add arugula or basil or parsley to the lettuce)<\/li>\n<li><strong>Tomatoes\u00a0<\/strong>(there is no limit to how many or the variety\u2014Roma, heirloom, Early Girl as long\u2014as long as they\u2019re very red, not mushy and please, whatever you do, don\u2019t put your tomatoes in the fridge \u2018cos they lose their flavor and texture)<\/li>\n<li><strong>Hard boiled eggs\u00a0<\/strong>(preferably pastured eggs from hens that feed non-GMO plant-based, organic feed aka what they\u2019re meant to eat. You\u2019ll notice the color is way yellower and the egg is way tastier than any organic eggs. Boil them for 5 minutes to be on the gooier side and 7 on the firmer.)<\/li>\n<li><strong>Olives\u00a0<\/strong>(go wild. Your pick. You can use purple Kalamata or green Castelvetrano. It doesn\u2019t matter as long as it\u2019s a good olive and please not those pre-sliced ones that come in a tin!)<\/li>\n<li><strong>Anchovies\u00a0<\/strong>(not everyone\u2019s favorite but helluva good for you. Super high in Omega 3 as any tiny fish are but they take a getting used to for sure.)<\/li>\n<li><strong>OVEE\u00a0<\/strong>(um\u2026extra virgin olive oil! The essential dressing to just about any salad!)<\/li>\n<\/ul>\n<p>Go wild with this creation! It doesn\u2019t matter whether you wanna rip the lettuce, chop; it neatly, eat it whole or cut the tomatoes in wedges or slices or chunks. Pit the olives or don\u2019t. Eat them whole or spliced up and same with the anchovies. Use them or don\u2019t and lay them out on top whole or chop them up into teeny slithers and toss them into the lettuce (like in this salad where they\u2019re invisible to the eye but not to the taste buds!) OR chop them up and put them in a cup of olive oil before you drizzle it on top!<\/p>\n<p>To this particular salad we added some fresh sprout seeds for extra protein as well as mozzarella balls and basil for a Caprese Salad spin on it and \u2018cos it\u2019s just yum!<\/p>\n<p><b>Bon App\u00e9tit!<\/b><br \/>\n<em>Dig in and devour it! and don\u2019t forget to comment below and let us know what you think. Tomatoes come in all shapes and sizes and are packed with Vitamin C, A and K, biotin, molybdenum. Plus, copper, manganese, folate, vitamin B6 and potassium! Not too shabby eh? So let\u2019s make the MOST of them while they\u2019re still in season.\n\nWe love our tomatoes fresh so throwing them in a salad seems like the best way to go especially since we want to be eating as much fresh salad as possible always (but especially while all these goodies are in season). When we think salad, we think color, we think flavor, we think variety. So what better than a\u00a0<strong>salad\u00a0Ni\u00e7oise<\/strong>\u00a0or\u00a0<i><b>la salada nissarda<\/b><\/i>\u00a0that originated in the French city of Nice to whet our appetites?\n\nAnd the best thing about this salad is you can eat it for brunch, lunch or dinner! It\u2019s that filling!\n\n<strong>How to make a really NICE Ni\u00e7oise salad?\u00a0<\/strong>\nHere\u2019s what you\u2019ll need:\n<ul>\n \t<li><strong>Lettuce\u00a0<\/strong>(any kind as long as it\u2019s fresh preferably straight from a farmer\u2019s market or organic \u2014romaine, butter or even add arugula or basil or parsley to the lettuce)<\/li>\n \t<li><strong>Tomatoes\u00a0<\/strong>(there is no limit to how many or the variety\u2014Roma, heirloom, Early Girl as long\u2014as long as they\u2019re very red, not mushy and please, whatever you do, don\u2019t put your tomatoes in the fridge \u2018cos they lose their flavor and texture)<\/li>\n \t<li><strong>Hard boiled eggs\u00a0<\/strong>(preferably pastured eggs from hens that feed non-GMO plant-based, organic feed aka what they\u2019re meant to eat. You\u2019ll notice the color is way yellower and the egg is way tastier than any organic eggs. Boil them for 5 minutes to be on the gooier side and 7 on the firmer.)<\/li>\n \t<li><strong>Olives\u00a0<\/strong>(go wild. Your pick. You can use purple Kalamata or green Castelvetrano. It doesn\u2019t matter as long as it\u2019s a good olive and please not those pre-sliced ones that come in a tin!)<\/li>\n \t<li><strong>Anchovies\u00a0<\/strong>(not everyone\u2019s favorite but helluva good for you. Super high in Omega 3 as any tiny fish are but they take a getting used to for sure.)<\/li>\n \t<li><strong>OVEE\u00a0<\/strong>(um\u2026extra virgin olive oil! The essential dressing to just about any salad!)<\/li>\n<\/ul>\nGo wild with this creation! It doesn\u2019t matter whether you wanna rip the lettuce, chop; it neatly, eat it whole or cut the tomatoes in wedges or slices or chunks. Pit the olives or don\u2019t. Eat them whole or spliced up and same with the anchovies. Use them or don\u2019t and lay them out on top whole or chop them up into teeny slithers and toss them into the lettuce (like in this salad where they\u2019re invisible to the eye but not to the taste buds!) OR chop them up and put them in a cup of olive oil before you drizzle it on top!\n\nTo this particular salad we added some fresh sprout seeds for extra protein as well as mozzarella balls and basil for a Caprese Salad spin on it and \u2018cos it\u2019s just yum!\n\n<b>Bon App\u00e9tit!<\/b>\n<em>Dig in and devour it! and don\u2019t forget to comment below and let us know what you think.
