{"id":9004111223101716,"date":"2017-06-15T14:51:39","date_gmt":"2017-06-15T14:51:39","guid":{"rendered":"https:\/\/staging.healthcoachinstitute.com\/?p=1343"},"modified":"2023-06-16T14:26:06","modified_gmt":"2023-06-16T14:26:06","slug":"bhc-students-scrumptious-chicken-salad-recipe","status":"publish","type":"post","link":"https:\/\/www.healthcoachinstitute.com\/articles\/bhc-students-scrumptious-chicken-salad-recipe\/","title":{"rendered":"BHC student\u2019s Fruit &#039;n Nut Chicken Salad &amp; Healthy Homemade Mayo Recipe"},"content":{"rendered":"<p>With spring in full bloom we\u2019re craving fresh, raw, organic veggies to mix in a salad so we turned to our BHC students for their personal twists on their fave recipe ideas and we loved this one from BHC grad, Julie Adams, \u2018cos it\u2019s also packed with protein.<\/p>\n<h2>High Quality Protein Rich Salad<\/h2>\n<p>Check it out\u2026<\/p>\n<h3>Scrumptious Chicken Salad<\/h3>\n<p>5 Cups Rotisserie Chicken, pulled**<br \/>1 Cup Sliced Red Grapes<br \/>1\/2-1 Cup diced Celery<br \/>1 diced Pink Lady, Fuji or Honeycrisp Apple<br \/>1\/2 Cup Craisins<br \/>1\/2 Cup Almonds, Pecans or Walnuts, chopped<br \/>3\/4 to 1 1\/4 Cup Plain 2% Greek Yogurt OR Homemade Mayo (See my <span id=\"urn:text-annotation-0dcdd0c2-e4e6-45e6-8115-db92e792612d\" class=\"textannotation disambiguated wl-other wl-link\" itemid=\"http:\/\/what-is.healthcoachinstitute.com\/hci\/enhancedcategory\/recipes\">recipe<\/span> below) half and half (If you like a runnier salad, do 1 1\/4 cup)<br \/>1 Tbs. Dijon<br \/>1 Tbs. Lemon Juice<br \/>1 1\/2 Tbs. Fresh Basil, julienned<br \/>1 1\/2 Tsp. Black Pepper<br \/>1 1\/2 Tsp. Salt<br \/>1 Tsp. Fresh Garlic, minced (optional)<\/p>\n<ul>\n<li class=\"m_8447257249824329593font_8\">In a large mixing bowl, mix yogurt with the Dijon, lemon juice, basil salt, pepper and garlic (if using).<\/li>\n<li class=\"m_8447257249824329593font_8\">Add the remaining ingredients and gently toss with a rubber spatula until all ingredients are fully coated.<\/li>\n<li class=\"m_8447257249824329593font_8\">Taste and season accordingly!<\/li>\n<li class=\"m_8447257249824329593font_8\">Serve on toasted sprouted bread, on a bed of mixed greens or scoop with corn tortilla chips!<\/li>\n<\/ul>\n<p>Bon Appetit!<br \/>NOTE: This recipe yields 8-10 generous servings and thus, is a nice thing to make ahead for your week\u2019s meals or snacks. It\u2019s delightfully fresh and flavorful, lasting up to four days refrigerated.<\/p>\n<p>**Rotisserie chicken is a fantastic, easy way to go as it\u2019s already seasoned and cooked perfectly. I get mine at Costco for $5. Simply pull and discard the skin and bones and voila!<br \/><img decoding=\"async\" class=\"alignnone wp-image-1345 size-full\" src=\"https:\/\/www.healthcoachinstitute.com\/wp-content\/uploads\/2018\/01\/Screen-Shot-2017-06-15-at-4.55.14-PM.png\" alt=\"\" width=\"1118\" height=\"1204\" \/><br \/>And if you\u2019re a mayonnaise lover and just can\u2019t have your chicken salad without it, you\u2019ll love my healthy, homemade mayo recipe!<\/p>\n<h2>Healthy Mayonnaise<\/h2>\n<p>1 Egg Yolk<br \/>1 Tsp. White Vinegar<br \/>1\/2-1 Tsp. Dijon Mustard (depending on how strong you like it)<br \/>1 TBS. Fresh Squeezed Lemon Juice<br \/>3\/4 Cup Extra Virgin Olive Oil<br \/>1\/2 Tsp. Salt<\/p>\n<ul>\n<li class=\"m_4618740230335270070font_8\">Place egg yolk, vinegar, mustard and lemon juice in blender and turn on lowest speed; with blender running,\u00a0slowly (I mean\u00a0SLOWLY) begin to pour olive oil\u00a0in and continue pouring until all of the oil is incorporated. (It should take 60-90 seconds if you\u2019re doing one batch.)<\/li>\n<\/ul>\n<p>*Note: it will spatter and look too \u201cthin\u201d for the first thirty seconds of you pouring the oil in, but after about 1\/2 cup of oil is added, it will begin to thicken and emulsify. Keep pouring until all is incorporated!<\/p>\n<p>After oil is in, add salt and blend two more seconds\u2026 Voil\u00e0! Dijon<br \/>1 Tbs. Lemon Juice<br \/>1 1\/2 Tbs. Fresh Basil, julienned<br \/>1 1\/2 Tsp. Black Pepper<br \/>1 1\/2 Tsp. Salt<br \/>1 Tsp. Fresh Garlic, minced (optional)<\/p>\n<ul>\n<li class=\"m_8447257249824329593font_8\">In a large mixing bowl, mix yogurt with the Dijon, lemon juice, basil salt, pepper and garlic (if using).<\/li>\n<li class=\"m_8447257249824329593font_8\">Add the remaining ingredients and gently toss with a rubber spatula until all ingredients are fully coated.<\/li>\n<li class=\"m_8447257249824329593font_8\">Taste and season accordingly!<\/li>\n<li class=\"m_8447257249824329593font_8\">Serve on toasted sprouted bread, on a bed of mixed greens or scoop with corn tortilla chips!<\/li>\n<\/ul>\n<p>Bon Appetit!<br \/>NOTE: This recipe yields 8-10 generous servings and thus, is a nice thing to make ahead for your week\u2019s meals or snacks. It\u2019s delightfully fresh and flavorful, lasting up to four days refrigerated.<\/p>\n<p>**Rotisserie chicken is a fantastic, easy way to go as it\u2019s already seasoned and cooked perfectly. I get mine at Costco for $5. Simply pull and discard the skin and bones and voila!<br \/><img class=\"alignnone wp-image-1345 size-full\" src=\"https:\/\/www.healthcoachinstitute.com\/wp-content\/uploads\/2018\/01\/Screen-Shot-2017-06-15-at-4.55.14-PM.png\" alt=\"\" width=\"1118\" height=\"1204\" \/><br \/>And if you\u2019re a mayonnaise lover and just can\u2019t have your chicken salad without it, you\u2019ll love my healthy, homemade mayo recipe!<\/p>\n<h2>Healthy Mayonnaise<\/h2>\n<p>1 Egg Yolk<br \/>1 Tsp. White Vinegar<br \/>1\/2-1 Tsp. Dijon Mustard (depending on how strong you like it)<br \/>1 TBS. Fresh Squeezed Lemon Juice<br \/>3\/4 Cup Extra Virgin Olive Oil<br \/>1\/2 Tsp. Salt<\/p>\n<ul>\n<li class=\"m_4618740230335270070font_8\">Place egg yolk, vinegar, mustard and lemon juice in blender and turn on lowest speed; with blender running,\u00a0slowly (I mean\u00a0SLOWLY) begin to pour olive oil\u00a0in and continue pouring until all of the oil is incorporated. (It should take 60-90 seconds if you\u2019re doing one batch.)<\/li>\n<\/ul>\n<p>*Note: it will spatter and look too \u201cthin\u201d for the first thirty seconds of you pouring the oil in, but after about 1\/2 cup of oil is added, it will begin to thicken and emulsify. Keep pouring until all is incorporated!<\/p>\n<p>After oil is in, add salt and blend two more seconds\u2026 Voil\u00e0!
