Who doesn’t love a nice, warm muffin with delicious butter slathered on top?
Butter has proven to be a healthy fat lately, so why not eat it on a healthy muffin while we are at it?
Gluten/Sugar Free “Weekend Muffins”
-1.5c oat flour (gluten-free oats ground in food processor)
-1tsp baking soda
-1/2 mashed banana
Toppings: cacao nibs, coconut flakes, any delicious dried fruits, etc.
Mix all the dry ingredients, fold in eggs (add a splash of almond milk if it is too thick) and mashed banana. Spray muffin pan (or use cupcake papers) and pour batter in each cup about 1/2 full. Bake at 375 F for 8-10 minutes. Remove from oven and sprinkle on toppings. Put back in the oven for 2-3 minutes.
Let cool and enjoy!
