Thai Style Mung Bean & Button Mushroom Curry
with Coconut Infused Brown Rice
For the rice:
- 3/4 cup of brown rice sprinkled with black pepper
- 1/2 can coconut milk
- 1 cup of water
Place all ingredients in an oven tray and cook on 180C/350F until the water is absorbed.
For the mung beans:
- 3/4 cup mung beans
- 1 red onion
- 1 Tbsp coconut oil
- 3 cloves garlic, chopped
- 1 carrot
- 1 Tbsp curry powder
- 1 can coconut milk
- 2 cups button mushrooms
- 1 stalk lemongrass
Cook the mung beans on a medium heat with about 1.5 -2 cups water.
Sauté 1 chopped red onion for 1-2 mins in 1 tbsp coconut oil.
Add 3 garlic cloves chopped, 1 chopped carrot and cook for another 2-3 mins.
Add 1 tbsp curry powder and stir in for one more minute.
Open a can of coconut milk, spoon up the cream and add in the pan. Cook for another 2-3 minutes until the milk reduces, then pour in the remaining coconut water from the can.
Add the button mushrooms, 1 whole stalk lemongrass (which has to be removed at the end of cooking as it has been used just for extra flavor) and cook until it gets a nice and creamy consistency. In the end, mix up it altogether with the mung bean.
Serve with the the rice, sprinkle with fresh basil and fresh red chili and enjoy!
I might be a now but that wasn’t always the case! In fact, if someone had told me 4 years ago that I would be so passionate about HOLISTIC HEALTH and I would no longer be interested in sweets & treats, I would have laughed at their face!
I mean, I was that person pursuing a career, working long hours and eating at 1am after starving myself through the whole day. I was constantly comforting myself with junk food and I was obsessed with chocolate—literally a sugar addict!!! It’s not only that I got overweight but I was always exhausted, annoyed and miserable. And as I was in a state of not loving myself, I wasn’t enjoying anything around me either. I tried a variety of diets and workouts but I could never achieve long lasting results…
I realised that I had to retrain my mind to think differently about food and physical activity in order to make changes that are sustainable and last a lifetime. I needed…a proven SYSTEM that’s fun & easy to follow and that can finally help me lose weight and gain energy FOR GOOD without deprivation or militant exercise!
Fast forward 4 years, 3 lost sizes (moving from size 14 to size 8), thousands of research hours, certification in , helping friends first and working with clients later, being at my best ever, I have combined my personal experience and professional expertise in a proven SYSTEM!
A system that can finally show you how to build with EASE new healthy habits that are in alignment with the way you want to look & feel every day, without chronic dieting and exercising like crazy and how to turn these habits into BEHAVIOURS that last a LIFETIME! — Zhana Gospodinova
